  • 1 tablespoon vegetable oil
  • 1 onion, diced
  • 1 tablespoon all-purpose flour
  • 1 tablespoon curry powder
  • 12 cup chicken stock
  • 12 light coconut milk
  • 2 cups cooked chicken, cubed
  • salt and pepper

Directions

    In a skillet, heat oil over medium heat.

    Add onion and cook, stirring until softened, about 3 minutes.

    Add flour and curry powder and cook, stirring about 1 minute.

    Add chicken stock, coconut milk and cook, stirring, until thickened, about 2 minutes.

    Add cooked chicken.

    Cover and simmer until chicken is heated through, about 5 minutes.

    Season with salt and pepper to taste.

    Serve over hot rice or warm naan bread.
