  • 2 Tbsp. olive oil
  • 1 lb. boneless skinless chicken breasts, cut into bite-size pieces
  • 2 cloves garlic, minced
  • 1 red pepper, cut into strips
  • 1 cup frozen peas
  • 2 green onions, sliced
  • 1/2 cup MIRACLE WHIP Dressing
  • 1 Tbsp. curry powder
  • 3/4 cup fat-free reduced-sodium chicken broth
  • 2 cups hot cooked long-grain white rice

Directions

    Heat oil in large skillet on medium heat.

    Add chicken and garlic; cook and stir 8 to 10 min.

    or until chicken is done.

    Remove from pan; cover to keep warm.

    Add remaining oil, peppers, peas and green onions; cook and stir 3 to 4 min.

    or until peppers are tender.

    Mix dressing and curry powder until blended.

    Add to vegetable mixture in skillet; mix well.

    Stir in chicken.

    Add broth; cook 3 to 4 min.
