- 1 Tbsp. curry powder
- 1 Tbsp. butter
- 1 onion, chopped
- 2 stalks celery, chopped
- 1/2 c. mushrooms, sliced
- 1 c. unpeeled apple, diced
- 1/2 c. beef broth
- 1 c. lite cream
- 1 c. milk
- 2 Tbsp. cornstarch
- 2 Tbsp. cold water
- 2 c. cooked chicken, diced
Directions

1Melt butter and brown curry powder in it. Add onion, mushrooms, celery and apple to curried butter; mix thoroughly. Add beef broth and bring to just a boil.

2Add lite cream and milk. Return to a boil.

3Mix cornstarch and water; add to sauce until thickened. Salt to taste.

4Add diced, cooked chicken and heat. Serve over hot rice with condiments (raisins, sauteed onions, nuts, chutney, coconut, etc.).

5Serves 4 to 6.
