Ingredients
- 1 lb. chicken breasts
- 1/2 c. flour
- 1/4 tsp. black pepper
- 6 Tbsp. extra virgin olive oil
- 1 c. chopped onion
- 1 clove garlic, chopped
- 1/2 c. chopped green bell pepper
- 1 1/2 tsp. curry powder
- 1/2 tsp. dried thyme leaves
- 2 c. canned tomatoes
Directions

1Preheat oven to 350°.

2Pat chicken with paper towels.

3Combine flour and pepper and sprinkle over both sides of chicken breasts. Heat the olive oil in a large skillet over medium heat.

4Saute chicken 15 minutes until lightly browned.

5Remove from skillet with a wide cake turner and place in a large heat-proof casserole. Saute onion, garlic, green pepper, curry powder and thyme.

6Saute in skillet 5 minutes until lightly browned.

7Add tomatoes.

8Stir until heated through.

9Pour tomato mixture over chicken casserole. Bake, uncovered, for 30 minutes until tender.
