Chicken Curry Casserole

- 1 1/2 lb. chicken breasts, cooked and cut in bite-size pieces
- 2 c. white rice, uncooked
- 12 to 16 oz. frozen peas
- 2 cans cream of chicken soup
- 1 c. mayonnaise (regular or no-fat)
- 2 Tbsp. curry powder
- 1 to 1 1/2 c. shredded cheddar
Directions

1Cook rice according to directions; spread in bottom of large baking dish. Cover with frozen peas.

2In separate bowl, combine soups, mayonnaise and curry powder; then spread 1/2 this mixture over peas.

3Next, place chicken pieces in dish.

4Spread remaining mixture over top.

5Sprinkle cheese and bake in 375° oven until heated through, about 45 minutes to 1 hour.

6Great dish to make ahead of time and freeze.

7Serves 8.
