Ingredients
- 1 chicken, cut up
- 1/2 c. flour
- 2 tsp. salt
- dash of pepper
- 1/4 c. butter or margarine
- 2 Tbsp. minced onion
- 2 Tbsp. chopped parsley
- 1 large clove garlic, chopped
- 1 (1 lb.) can tomatoes
- 2 tsp. curry powder
- 1 tsp. coriander or cumin
- 1/2 tsp. thyme
- 1/4 c. raisins
Directions

1Coat chicken with flour, salt and pepper.

2Brown in butter. Add onion, parsley and garlic.

3Cook until onion is soft.

4Add tomatoes, curry and remaining spices.

5Cover.

6Simmer about 45 minutes.

7Add raisins; simmer 10 minutes longer.

8Serve over cooked rice.
