Chicken De Provence

- 1 clove garlic
- 3 scallions, sliced
- 2 chicken breasts
- 4 large mushrooms, sliced
- 1/2 c. chicken stock
- 1/2 c. white wine
- 1 lemon
- 3 Tbsp. butter
- 1 tsp. herbs (de provence)
- 12 Tbsp. flour
- salt and pepper to taste
Directions

1Cut each breast in half.

2Dredge in mixture of flour, salt and pepper.

3Saute breasts in butter until lightly brown.

4Add garlic, sliced scallions and mushrooms for 10 minutes.

5Add herbs de provence.

6Then add juice of lemon, wine and stock.

7Simmer for 20 minutes until done.
