Chicken Dice Casserole

  • 4 c. cooked and cut up chicken
  • 4 c. cooked rice (wild grain tastes best)
  • 2 c. milk or half and half
  • 2 cans cream of mushroom soup
  • 1 onion, chopped
  • 1/2 lb. Velveeta cheese, cubed
  • 1 box frozen broccoli flowerets
  • 1 c. bread crumbs

Directions

    Blend together milk and soup.

    Mix all other ingredients in a large casserole dish (except bread crumbs).

    Stir in soup mixture. Refrigerate for 8 hours.

    Top with bread crumbs and bake, uncovered, at 350° for 1 hour, until bubbly.
