Chicken Dijon

Ingredients

  • 3 skinless, boneless chicken breasts
  • 1 lb. fresh broccoli, cut into spears, cooked and drained
  • 1 can Campbell's cream of chicken and broccoli soup (use Healthy Request for less fat)
  • 1/8 tsp. salt
  • 1 c. water
  • 2 Tbsp. Dijon-style mustard
  • 6 crescent rolls or biscuits, baked
  • 1 small can or jar mushrooms

Directions

    Boil chicken until done, approximately 30 minutes.

    Drain and cut into chunks.

    In large pan combine soup, water, mustard and salt.

    Heat to boiling, add chicken, broccoli and mushrooms.

    Let simmer for 15 to 20 minutes.

    Add more water if too thick.

    Pour mixture over biscuits or rolls.

    Makes 3 to 4 servings.
