- 4 skinless, fat trimmed, deboned chicken breasts
- 1 medium onion, chopped
- 1 Tbsp. canola oil
- 1/4 c. nonfat milk
- 1 Tbsp. Dijon mustard
- 1 Tbsp. dried parsley flakes
- 1 can cream of mushroom soup
Directions

1In skillet, in 1 tablespoon oil, cook chicken and onions until chicken is brown.

2Remove to paper towels and pat dry.

3Wipe oil from skillet and add soup, milk, mustard and parsley.

4Heat to boiling.

5Add chicken and onions.
-
6Cover and simmer 5 to 10 minutes or until chicken is completely done and tender.

7Serve over brown rice with asparagus and French bread.
