- 1 large onion, chopped
- 1/2 stick butter
- salt and pepper
- 1 small fryer, cut up in pieces without skin
- 1 c. heavy cream
- 1 tsp. curry
- 3/4 c. brandy or Madeira
Directions

1Saute onion in butter on low heat.

2Salt and pepper chicken and cook, covered, on low heat 45 minutes or until tender.

3Remove chicken to platter.

4Add cream, curry, brandy or Madeira in existing juices in pan.

5Stir over low heat, but do not boil or cream will curdle.

6Return chicken to pan and spoon sauce over it. Can be served with rice and salad.
