  • 1 small onion, chopped
  • 1 c. celery, finely chopped
  • 1 1/2 tsp. black pepper
  • 1 tsp. poultry seasoning or sage
  • 1/2 c. margarine
  • 6 c. cornbread crumbs
  • 2 c. biscuit crumbs
  • 1 chicken

Directions

    Cook chicken with 6 to 8 cups of water and salt to taste. Cook onion and celery in margarine until tender.

    Mix bread crumbs with seasonings.

    Add cooked onion and celery and enough broth from cooked chicken to make a batter about as thick as cornbread batter.

    Pour 1/2 batter in buttered baking pan.

    Place deboned chicken on top of dressing.

    Top with remaining batter.

    Bake in 350° oven for 40 minutes or until brown on top.
