Chicken Enchilada

Ingredients

  • 1 c. chopped onion
  • 1 clove garlic, minced (optional)
  • 1 (16 oz.) can stewed tomatoes
  • 2 1/2 or 3 c. cooked, shredded chicken (3 or 4 pieces, breast)
  • 10 to 12 tortillas (flour)
  • 1/2 pkg. shredded Cheddar cheese
  • 3 chicken bouillon cubes
  • Swiss cheese

Directions

    Saute onion and garlic.

    Add tomatoes, chicken and bouillon, simmer 15 minutes.

    Add Cheddar cheese.

    Spoon into tortillas, roll up and place in 9 x 13-inch baking dish.

    Sprinkle with Swiss cheese and bake at 350° for 25 minutes.
