Chicken Enchilada

  • 1 lb. boiled boneless chicken breast
  • 2 onions, sliced
  • 2 cans cream of chicken soup
  • 1 small container sour cream
  • 1 lb. grated mexican cheese
  • 10 flour tortillas shells

Directions

    Cut chicken into strips, place in a large pot; add onions, soup, sour cream and one soup can of water, salt and pepper to taste.

    Bring to a boil, cooking until chicken is done.

    Add cheese and cook until melted.

    Spoon into tortillas shells and fold up. Using left over mix you can spoon it onto the top of your shells.
