Chicken Enchiladas

  • 4 chicken breasts
  • 1 onion
  • 1 can cream of chicken soup
  • 1 can Ro-Tel tomatoes and chilies
  • 1 can whole green chilies, cut up
  • 3/4 c. chicken broth
  • garlic and salt to taste
  • 8 thick corn tortillas
  • grated cheese

Directions

    Boil chicken and onion; bone, skin and set aside.

    Mix together and bring to a boil the soup, Ro-Tel, chilies, broth, salt and garlic.

    Fry tortillas and tear in half.

    Layer half of tortillas, half of sauce, half of grated cheese and all of chicken, cut in medium size pieces.

    Then layer other half of tortillas, half of sauce and half of cheese.

    Bake at 350° for 15 minutes in a 2-quart dish.
