Chicken Enchiladas

Ingredients

  • 2 whole chickens, cooked and pieced
  • 2 pkg. flour tortillas
  • oil
  • 1 lb. Monterey Jack cheese, shredded
  • 1 lb. Cheddar cheese, shredded
  • 1 (16 oz.) sour cream
  • 1 can cream of mushroom soup
  • 1 can cream of celery soup
  • 2 small cans chopped green chilies
  • 1 large can red enchilada sauce

Directions

    Fry tortillas in oil, just enough to soften. Dip in enchilada sauce and put 1 layer in oblong pan.

    Add 1 layer of chicken, 1 layer of soups (blended together) and 1 layer of cheeses. Continue layers until all ingredients are used.

    Reserve some shredded cheese for top.
