Chicken Enchiladas

- 3 c. cooked chicken
- 1 1/2 c. Mozzarella cheese
- 1 1/2 c. Cheddar cheese
- 1/2 c. olives, chopped
- 1/2 c. onions, chopped
- 6 c. enchilada sauce
- 3 doz. 6-inch flour tortillas
Directions

1Boil chicken until tender; let cool.

2Remove from bones and cube.

3Mix in bowl with 1 cup Mozzarella cheese, 1 cup Cheddar cheese, olives, onions and 1 cup enchilada sauce.

4Heat tortillas in about 1/2 inch of hot oil in a large skillet.

5Remove tortillas from oil and dip in sauce.

6Roll about 3 tablespoons of mixture into each tortilla and place in 1-inch deep ungreased baking pan. Spread remaining sauce on top of enchiladas.

7Spread the remaining Mozzarella cheese and Cheddar cheese on top.

8May be topped with extra olives.

9Bake at 350° for approximately 30 minutes; until all cheese is melted.

10Makes approximately 36 enchiladas.
