- 1 medium onion
- 2 Tbsp. margarine
- 2 c. shredded cooked chicken
- 1 c. picante sauce
- 1 tsp. ground cumin
- 2 c. Monterey Jack cheese
- 8 to 10 flour tortillas
Directions

1Cook onion in butter until tender.

2Stir in chicken, 1/2 cup picante sauce and cumin; heat.

3Remove from heat; stir in 1 cup cheese.

4Spoon about 1/3 cup chicken mixture down the center of each tortilla; roll.

5Place seam side down in 9 x 13-inch baking dish.

6Spoon remaining picante sauce over enchiladas; sprinkle with cheese.

7Bake at 350° for 15 minutes.

8Top with onions and sour cream.
