Chicken Enchiladas

- 1 chicken or Schwans diced frozen chicken*
- 1 small onion
- butter
- 1 (10 oz.) can cream of chicken soup
- 1 (10 oz.) can cream of mushroom soup
- 1 (4 oz.) can chopped green chilies
- corn tortillas
- 1 lb. Longhorn cheese, shredded
Directions

1Wash chicken or thaw diced chicken.

2Cook fresh chicken in water to cover in saucepan until tender.

3Drain, reserving 1 1/2 cups broth.

4(If you use frozen diced chicken, use 1 1/2 cups canned broth.)

5Chop chicken in bite size pieces.

6Saute onion in a small amount of butter in large skillet.

7Add soups, green chilies and broth; mix well.

8Stir in chicken.

9Layer tortillas, chicken mixture and cheese 1/2 at a time in a 9 x 13-inch baking dish.

10Bake at 350° for 30 minutes.

11Garnish with salsa and sour cream.
