  • whole chicken
  • onions (optional)
  • Cheddar cheese, shredded and mixed with Monterey Jack cheese
  • salt
  • pepper
  • red sauce
  • flour tortillas

Directions

    Grease a 9 x 13-inch pan.

    Cook chicken and debone.

    Salt and pepper to taste.

    Place tortillas on flat surface.

    On one end of the tortilla, place a small handful of chicken, then onions if desired. Top off with a handful of cheese.

    Roll tortilla and place in greased pan.

    Continue with this until chicken and cheese are gone or desired number of enchiladas.

    Top with 1/2 of red sauce.

    Place in oven at 350° for 20 to 30 minutes until cheese is melted.

    Top with rest of red sauce.

    Makes 8 large enchiladas.
