- whole chicken
- onions (optional)
- Cheddar cheese, shredded and mixed with Monterey Jack cheese
- salt
- pepper
- red sauce
- flour tortillas
Directions

1Grease a 9 x 13-inch pan.

2Cook chicken and debone.

3Salt and pepper to taste.

4Place tortillas on flat surface.

5On one end of the tortilla, place a small handful of chicken, then onions if desired. Top off with a handful of cheese.

6Roll tortilla and place in greased pan.

7Continue with this until chicken and cheese are gone or desired number of enchiladas.

8Top with 1/2 of red sauce.

9Place in oven at 350° for 20 to 30 minutes until cheese is melted.

10Top with rest of red sauce.

11Makes 8 large enchiladas.
