Chicken Enchiladas

  • 10 large flour tortillas
  • 4 cups chopped cooked chicken
  • 2 cups grated Mexican blend cheese
  • 1 cup finely chopped onions cooked slightly
  • 3/4 cup green olives
  • 1 sweet pepper finely chopped
  • 16 ounces sour cream
  • 1 cup shredded cheddar cheese
  • 16 ounces red enchilada sauce

Directions

    preheat flour tortillas in microwave to soften before rolling

    combined chicken, onion, cheeses, olives, sour cream, peppers and some salsa.

    Place mixture on tortillas and wrap up.

    Place each tortillas in a 9x13 glass dish.

    Pour enchilada sauce over top of all of them.

    bake 50 minutes in a preheated 350 degree oven covered

    sprinkle some cheese on top and a little salsa and bake uncovered 10 more minutes.

    this dish serves well with sides of corn or Mexican rice
