- 1 broiler chicken, cut up
- 1 tsp. salt
- 1/2 tsp. cayenne pepper
- 8 oz. onion slices
- 6 Tbsp. lime juice
- 1/4 c. chicken bouillon
- 1/4 tsp. paprika
- 1/4 tsp. chili powder
- 1 (4 oz.) jar pimentos, drained
Directions

1Sprinkle chicken with salt and pepper.

2Place half the onions in baking dish.

3Place chicken on onions and top with remaining onions.

4Combine lime juice, bouillon, paprika and chili powder; pour over chicken and onions.

5Cover and refrigerate 2 hours. Remove from refrigerator 30 minutes before cooking.

6Place pimentos over onions and chicken.

7Bake, covered, at 325° for 30 minutes. Remove cover.

8Bake 30 minutes longer or until chicken is tender. Serves 4.
