- 1/2 c Farro
- 6 oz(9 cups) mixed baby greens
- 1 1/2 c cooked chicken cut into strips
- 1/3 c chopped dates
- 1/3 c unsweetened dried cranberries
- 2 oz Manchego, shaved w/peeler
- 1/4 t salt
- 3/4 c Champagne Vinaigrette
- 1/4 c chopped Marcona almonds
Directions

1Bring 2 qts of salted water to a boil. Add farro and simmer, stirring occasionally, 45 - 60 minutes, until tender. Drain well and spread on dish to cool.

2Combine greens, chicken, farro, cranberries, dates, cheese, and salt.

3Toss w/1/2 c Vinaigrette.

4Garnish with almonds
