Chicken-Farro Salad

  • 1/2 c Farro
  • 6 oz(9 cups) mixed baby greens
  • 1 1/2 c cooked chicken cut into strips
  • 1/3 c chopped dates
  • 1/3 c unsweetened dried cranberries
  • 2 oz Manchego, shaved w/peeler
  • 1/4 t salt
  • 3/4 c Champagne Vinaigrette
  • 1/4 c chopped Marcona almonds

Directions

    Bring 2 qts of salted water to a boil. Add farro and simmer, stirring occasionally, 45 - 60 minutes, until tender. Drain well and spread on dish to cool.

    Combine greens, chicken, farro, cranberries, dates, cheese, and salt.

    Toss w/1/2 c Vinaigrette.

    Garnish with almonds
