Ingredients

  • 1 to 1 1/2 lb. choice chicken pieces (I use breast tenders)
  • 1 lb. ground sausage
  • Creole seasoning
  • 1 c. chopped bell pepper
  • 1 c. finely diced celery
  • 1 small onion, chopped
  • 1 bunch green onions, chopped with tops
  • 1 pkg. Rice-A-Roni
  • 1 can Mexicorn
  • 1 c. grated Cheddar cheese
  • 1 can cream of chicken soup
  • 1 can cream of mushroom soup

Directions

    Sprinkle chicken tenders (or any part of chicken) with Creole seasoning.

    Brown in 2 tablespoons butter.

    Remove and set aside. In same skillet, brown sausage and vegetables until vegetables are tender.

    Cook Rice-A-Roni according to directions.

    Combine the cooked Rice-A-Roni and sausage mixture.

    Add the Mexicorn and the soups.

    Stir in 1 cup of cheese.

    Pour this mixture into a casserole dish.

    Place the chicken pieces on top of the casserole. Bake at 350° for 25 to 30 minutes.
