- 2 boneless chicken breasts
- salt and pepper
- 1/2 c. flour
- 1 egg, blended with 1 tsp. oil
- 1 1/2 c. bread crumbs
- 3 Tbsp. melted oil
Directions

1Cut chicken breasts in slices or strips, about 3/8-inch thick. Toss in salt, pepper and flour.

2Coat with egg mixture and toss with crumbs.

3Spread on tray and refrigerate to set the crumbs. Heat oil in large frypan.

4When hot, saute chicken strips 2 to 3 minutes, until crisp and brown.
