Chicken Florentine

  • 3 to 4 chicken breasts
  • 2 tsp. vegetable oil
  • 3/4 c. Italian bread crumbs
  • 1 tsp. basil
  • 10 oz. frozen spinach
  • 6 oz. sliced Mozzarella

Directions

    Cut chicken into bite sized pieces.

    Cook spinach according to package.

    Heat oil in wok or skillet.

    Place bread crumbs and basil in plastic bag with chicken pieces.

    Shake to coat. Stir-fry chicken in oil until browned.

    Spread drained, cooked spinach on top of chicken.

    Cover with Mozzarella cheese.

    Cover with lid until cheese is bubbly.
