Chicken Fried Rice

  • 1 tsp vegetable oil
  • 1 small onion, thinly sliced
  • 1 clove garlic, chopped
  • 1/4 cup frozen peas
  • 1 cup cold cooked brown rice
  • 1 cooked, skinless chicken breast, chopped
  • 1 tbsp soy sauce
  • 1 tbsp water
  • 1 egg white
  • 1 tsp toasted sesame oil

    Heat the vegetable oil in a skillet

    Add the onion and cook for 2-3 minutes

    Add the garlic and cook 1 minute longer

    Add the rice and stir fry a little

    Add the chicken and the peas, followed by the soy sauce and water

    Stir fry a couple of minutes until hot

    Make a space in the middle of the rice mixture, and crack the egg white into the space

    Allow the egg white to cook a little then mix it into the rice until thoroughly cooked

    Dress with the sesame oil and serve immediately
