  • 4 medium boneless, skinless chicken breast halves (12 oz. total)
  • 2 Tbsp. soy sauce
  • 1/8 tsp. pepper
  • 1 Tbsp. cooking oil
  • 3 beaten eggs
  • 1 Tbsp. cooking oil
  • 2 cloves garlic, minced
  • 8 green onions, diagonally sliced into 1-inch pieces (1 1/2 c.)
  • 1 c. sliced fresh mushrooms or enoki mushrooms
  • 3 c. chilled, cooked rice
  • 1/2 c. frozen peas, thawed
