- 1 c. bean sprouts
- 1 Tbsp. vegetable oil
- 1 c. sliced mushrooms
- 3 c. cold cooked regular rice
- 1 c. cut up cooked chicken
- 2 green onions (with tops), sliced (about 2 Tbsp.)
- 1 Tbsp. vegetable oil
- 2 eggs, slightly beaten
- 3 Tbsp. soy sauce
- dash of white pepper
Directions

1Rinse bean sprouts under running cold water; drain.

2Heat 1 tablespoon vegetable oil in 10-inch skillet until hot.

3Rotate skillet until oil covers bottom.

4Cook and stir mushrooms in oil over medium heat until coated, about 1 minute.

5Add bean sprouts, rice, chicken and onions; cook and stir over medium heat, breaking up rice, until hot, about 5 minutes.

6Push rice mixture to side of skillet.

7Add 1 tablespoon vegetable oil to skillet.

8Add eggs; cook and stir over medium heat until eggs are thickened throughout but still moist.

9Stir eggs into rice mixture.

10Stir in soy sauce and white pepper.

11Makes 4 servings.
