  • 1 1/2 lb. beef round steak (1/4-inch thick)
  • 1 egg, beaten
  • 1 Tbsp. milk
  • 1 c. saltine crackers, crushed fine
  • 1/4 c. vegetable oil
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 2 Tbsp. flour
  • 1 1/2 c. milk or water

    Pound beef slices to flatten and tenderize.

    Mix egg and 1 tablespoon milk in pie pan. Dip meat in egg mixture, then in crushed crackers.

    In a heavy skillet, brown meat in hot oil. When meat is browned, season with salt and pepper.

    Cover skillet. Reduce heat and simmer slowly about 45 to 60 minutes or until tender. Remove meat to platter and keep warm.
