  • 4 chicken breast halves (may be skinless, boneless)
  • 2 to 4 onions, sliced
  • 2 to 4 potatoes, cut like French fries
  • 1 large can whole tomatoes
  • 1 Tbsp. oil
  • salt and pepper
  • cooked rice

Directions

    Fry chicken breasts in heavy skillet with oil until almost done.

    Add the sliced onions and cook until onions are clear.

    Add the canned tomatoes and potatoes.

    Season with salt and pepper to taste.

    Cook over low heat until the potatoes are just crisp. Serve over rice.
