- 2 to 4 onions, sliced
- 2 to 4 potatoes, cut like French fries
- 1 large can whole tomatoes
- 1 Tbsp. oil
- salt and pepper
- cooked rice
Directions

1Fry chicken breasts in heavy skillet with oil until almost done.

2Add the sliced onions and cook until onions are clear.

3Add the canned tomatoes and potatoes.

4Season with salt and pepper to taste.

5Cook over low heat until the potatoes are just crisp. Serve over rice.
