Ingredients

  • 1 (16 oz.) can tomatoes
  • 1/2 green pepper, chopped
  • 1 Tbsp. hot salsa
  • dash of cayenne pepper
  • 1 tsp. sweet basil
  • 1 can tomato paste
  • 1 1/2 c. water or 2 Tbsp. vinegar
  • 1 medium onion, chopped
  • 2 cloves garlic, crushed
  • salt and pepper to taste
  • 1/2 tsp. yellow mustard
  • 3/4 lb. chicken breast, diced
  • 1 can pineapple chunks, drained
  • 1/4 c. white wine
  • 1 can chicken broth

Directions

    Put olive oil in frying pan.

    Saute onion, pepper and garlic. Add balance of ingredients and cook over low heat, stirring occasionally, for a couple of hours.

    Add pineapple chunks 5 minutes before serving over rice or pasta.
