Chicken Gumbo

Ingredients

  • 2 Tbsp. flour
  • 1/2 c. oil
  • 1 slice bacon, diced
  • 1 onion, chopped
  • 1/2 green pepper, chopped
  • 1 clove garlic, minced
  • 1 tsp. soy sauce
  • 1 Tbsp. Worcestershire sauce
  • 1 tsp. salt
  • dash of pepper
  • dash of hot sauce
  • 1 can tomatoes
  • 4 whole chicken breasts, cut off the bone in bite-size pieces
  • 2 to 3 c. water
  • 1 1/2 c. cut okra
  • 1 1/2 tsp. gumbo file (optional)
  • hot rice

Directions

    Combine flour and oil in large Dutch oven.

    Stir over medium heat until flour is medium brown.

    Stir in cut-up bacon and cook 1 minute.

    Add onion, green pepper and garlic and cook until onion is transparent.

    Add next 8 ingredients (soy sauce through water). Simmer 45 minutes, or until chicken is tender.

    Add okra and cook 10 minutes.

    Stir in file just before serving over hot rice.

    Good with cornbread.
