- 3 Tbsp. butter
- 1 lb. okra, sliced
- 1 small onion, chopped
- 1/2 small green pepper, chopped
- 4 c. chicken broth
- 1 (16 oz.) can whole tomatoes
- 1 bay leaf
- 1 tsp. salt
- dash of pepper
- 2 c. cooked chicken
- 1 Tbsp. chopped parsley
- hot, cooked rice
Directions

1Heat butter in large 3-quart saucepan.

2Cook okra, onions and green pepper until soft.

3Add broth, tomatoes with liquid, bay leaf, salt and pepper.

4Heat to boiling; reduce heat and simmer, uncovered, 15 minutes.

5Stir in chicken and heat through.

6Stir in parsley.

7Serve over rice.
