- 2 lb. boneless chicken breasts
- 2 oz. corn oil
- 1/2 tsp. salt and pepper
- 1 large can sliced mushrooms (don't drain)
- 3 oz. butter
- 4 oz. cooking sherry
Directions

1Cut chicken into bite size pieces and dip in flour.

2Brown in corn oil.

3Salt and pepper after browning.

4Pour off oil.

5Add mushrooms with liquid and butter.

6Allow butter to melt.

7Add sherry and cook 5 minutes.

8Put into a casserole dish.

9Bake for 15 to 20 minutes at 350°.

10Serve over rice or pasta.
