  • 2 lb. boneless chicken breasts
  • 2 oz. corn oil
  • 1/2 tsp. salt and pepper
  • 1 large can sliced mushrooms (don't drain)
  • 3 oz. butter
  • 4 oz. cooking sherry

    Cut chicken into bite size pieces and dip in flour.

    Brown in corn oil.

    Salt and pepper after browning.

    Pour off oil.

    Add mushrooms with liquid and butter.

    Allow butter to melt.

    Add sherry and cook 5 minutes.

    Put into a casserole dish.

    Bake for 15 to 20 minutes at 350°.

    Serve over rice or pasta.
