- 1/3 c. fresh coconut, finely shredded
- 5 green onions with stems, diced
- 1/2 Tbsp. red pepper flakes
- 2 lemons, freshly squeezed
- salt
- pepper
Directions

1Using a fork, separate chicken from bones.

2Remove skin, if you desire, and then shred chicken.

3Add chicken, coconut, green onions and red pepper flakes.

4Mix thoroughly.

5When dish is ready to be served, add lemon juice; mix well.

6Add salt and pepper to taste. Serves 4.
