  • 4 tablespoons butter
  • 12 teaspoon garlic powder
  • 1 teaspoon parsley, minced
  • 2 boneless skinless chicken breast halves
  • 1 egg
  • 14 cup flour
  • 14 cup breadcrumbs, finely crushed
  • 2 12 cups vegetable oil

Directions

    Combine butter, garlic powder and minced parsley; form into 2 log shaped rolls.

    Pound chicken breast halves flat and insert butter log in natural pocket on underside of each half of chicken.

    Roll up, using toothpicks to hold it closed.

    Beat egg; dip chicken first in flour, then in egg and finally in the bread crumbs, coating well.

    Chill at least 1 hour.

    Heat oil in fryer and deep fry for 15 minutes or until browned and tender.

    Drain in basket.
