- 4 tablespoons butter
- 12 teaspoon garlic powder
- 1 teaspoon parsley, minced
- 2 boneless skinless chicken breast halves
- 1 egg
- 14 cup flour
- 14 cup breadcrumbs, finely crushed
- 2 12 cups vegetable oil
Directions

1Combine butter, garlic powder and minced parsley; form into 2 log shaped rolls.

2Pound chicken breast halves flat and insert butter log in natural pocket on underside of each half of chicken.

3Roll up, using toothpicks to hold it closed.

4Beat egg; dip chicken first in flour, then in egg and finally in the bread crumbs, coating well.

5Chill at least 1 hour.

6Heat oil in fryer and deep fry for 15 minutes or until browned and tender.

7Drain in basket.
