  • 1/2 cup chopped Vidalia onion
  • 1 1/2 cloves garlic, minced
  • 1 1/2 tsp minced gingerroot
  • 1/2 cup water chestnuts, drained and chopped
  • 1 cup diced cooked skinless dark-meat chicken
  • 2 Tbsp low-sodium chicken broth
  • 1 Tbsp low-sodium soy sauce
  • 2 Tbsp rice wine vinegar
  • 1 pinch ground black pepper
  • 2 cups cooked brown rice
  • 2 scallions, thinly sliced
  • 4 Bibb lettuce leaves, washed
  • 1 tsp black sesame seeds
