Chicken-Mac Casserole

  • 1 1/2 c. elbow macaroni, cooked and drained
  • 6 slices bacon, fried and crumbled
  • 2 c. cubed, cooked chicken
  • 1 can French fried onions
  • 1 can cream of mushroom soup
  • 1 c. sour cream or plain yogurt
  • 1 (10 oz.) pkg. frozen chopped spinach, drained
  • 1/8 tsp. garlic powder
  • 1 1/2 c. shredded Cheddar cheese, divided

Directions

    Preheat oven to 375°.

    In saucepan, plate hot macaroni, bacon, chicken and 1/2 can onions.

    In medium bowl, combine soup, sour cream, spinach, garlic powder and 1 cup Cheddar cheese.

    Spoon half macaroni mixture into greased 8 x 12-inch baking dish.

    Cover with half spinach mixture.

    Repeat layers.

    Bake, covered, at 375° for 30 minutes or until heated through.

    Top with remaining cheese and onions. Bake, uncovered, for 3 to 5 minutes or until onions are golden brown.
