- chicken pieces for 4
- 1 clove garlic
- 2 Tbsp. olive oil
- 4 Tbsp. butter
- 1/2 lb. mushroom caps
- 1 c. chopped tomatoes
- 1 c. white wine
- salt and pepper
Directions

1Heat a clove of garlic in 2 tablespoons each of olive oil and butter.

2Brown chicken pieces in this mixture.

3Remove chicken to a covered casserole.

4Add 2 tablespoons butter to frying pan and lightly brown mushroom caps.

5Add chopped tomatoes, white wine, salt and pepper.

6Pour tomato-wine mixture over chicken pieces and cook in oven at 350° to 400° until the chicken is tender, about 1 hour.

7Serve with white rice.
