Chicken Marangot

  • chicken pieces for 4
  • 1 clove garlic
  • 2 Tbsp. olive oil
  • 4 Tbsp. butter
  • 1/2 lb. mushroom caps
  • 1 c. chopped tomatoes
  • 1 c. white wine
  • salt and pepper

Directions

    Heat a clove of garlic in 2 tablespoons each of olive oil and butter.

    Brown chicken pieces in this mixture.

    Remove chicken to a covered casserole.
  4. 4
    Add 2 tablespoons butter to frying pan and lightly brown mushroom caps.

    Add chopped tomatoes, white wine, salt and pepper.

    Pour tomato-wine mixture over chicken pieces and cook in oven at 350° to 400° until the chicken is tender, about 1 hour.

    Serve with white rice.
