  • 4 medium boned, skinless chicken breast halves
  • nonstick spray coating
  • 1 1/2 c. sliced mushrooms (fresh)
  • 2 Tbsp. sliced green onion
  • 2 Tbsp. water
  • 1/4 tsp. salt
  • 1/4 c. dry Marsala or dry sherry

Directions

    Place one piece of chicken, boned side up, between 2 layers of clear plastic wrap.

    Working from the center to the edges, pound lightly with meat mallet to about 1/4-inch thick.

    Repeat with rest of chicken.
