Chicken Marsala

- 2 Tbsp. butter
- 3 Tbsp. oil
- 2 cloves garlic, chopped
- 1/2 c. mushrooms, sliced
- 1 c. flour
- 1 tsp. salt
- 1/2 tsp. pepper
- 2 1/2 to 3 lb. boneless chicken breasts
- 2/3 c. Marsala or Port wine
- 1 c. chicken broth
Directions

1Heat butter and oil in electric skillet.

2Saute garlic and mushrooms until lightly golden.

3Pound chicken pieces until thin. Coat chicken on both sides in flour that has been seasoned with salt and pepper.

4Remove garlic and mushroom pieces.

5Add chicken pieces to skillet.

6Fry 2 to 3 minutes on each side until lightly brown.

7Remove from pan.
-
8Add wine to pan.
-
9Deglaze pan.

10Add chicken broth.

11Stir to make light gravy.

12Add chicken pieces and mushrooms to gravy.

13Heat several minutes until warm.

14Serve as an accompaniment to potatoes, rice or pasta.
