Chicken Milano

  • 2 whole boneless, skinless chicken breasts, cut in 1 1/2 inch chunks
  • 2 Tbsp. butter or margarine
  • 1 medium onion, sliced
  • 1 small clove garlic, minced
  • 1 - 10 3/4 oz. can condensed tomato soup
  • 1 - 4 oz. can sliced mushrooms, drained
  • 2 medium zucchini, sliced
  • 1/2 tsp. basil
  • 1/8 tsp. crushed red pepper

Directions

    In a 10 inch skillet, cook onion and garlic in butter until tender.

    Add chicken and cook until no longer pink.

    Stir in tomato soup and remaining ingredients.

    Cover and simmer for 20 minutes. Serve over rice.
