Chicken Minestrone

  • 1 qt. water
  • 2 tsp. chicken flavored bouillon granules
  • 1/2 tsp. dried whole basil
  • 1/2 tsp. dried whole oregano
  • 1 (10 oz.) pkg. frozen mixed vegetables
  • 3 oz. spaghetti, broken
  • 1 lb. fresh mushrooms, sliced
  • 2 c. cubed, cooked chicken breast
  • 2 medium zucchini squash, sliced
  • 1 (16 oz.) can tomatoes, undrained and chopped

    Combine first 6 ingredients in a Dutch oven.

    Bring to a boil; cover.

    Reduce heat and simmer 5 minutes.

    Add mushrooms, chicken, zucchini squash and tomatoes.

    Cover; reduce heat and simmer 5 minutes or until tender.
