Chicken Noodle Soup

Ingredients

  • 6 pieces of chicken, I used 2 thighs and 4 drumsticks
  • 1 Enough water to cover chicken in large pot
  • 2 boxes of chicken broth
  • 3 celery stalks, diced
  • 3 to 4 carrorts peeled and diced
  • 1 medium sized yellow onion
  • 1/2 packages of pasta
  • 1 bay leaf
  • 1 chopped parsley
  • 1 pinch of italian seasoning
  • 1 salt and pepper to taste

Directions

    Put chicken in large pot, add enough water to cover chicken.

    Place on med high heat and bring to a boil.

    And simmer until chicken is completely cooked.

    About 20 minutes.

    Skimming off fat from the top.

    As chicken cooks, dice carrots, onion, and celery.

    When chicken is done, remove from water, saving the stock water left.

    Set chicken aside to cool.

    Once cooled cut chicken off the bone and dice.

    Add onion and celery and bring to a boil, lower to simmer for 10 Min.

    Add carrots and simmer another 15 Min until tender but not soggy...

    Add chicken, spices and salt and pepper.

    Simmer until heated then turn off heat.

    In a separate pot bring a little salt and and water to a boil And add pasta, cook according to package.

    Add a ladle full of pasta water to broth.

    Once done drain pasta, add to broth.
