- 1/2 c. medium or hot chunky taco sauce
- 1/4 c. Dijon-style mustard
- 2 Tbsp. fresh lime juice
- 3 whole chicken breasts, split, skinned and boned
- 2 Tbsp. margarine
- chopped fresh parsley (for garnish)
- reduced fat sour cream (optional)
Directions

1Combine taco sauce, mustard and lime juice in large bowl.

2Add chicken, turning to coat.

3Cover; marinate in refrigerator at least 30 minutes.

4Melt margarine in large skillet over medium heat until foamy.

5Remove chicken; reserve marinade.

6Add chicken to skillet; cook about 10 minutes or until brown on both sides. Add marinade; cook about 5 minutes or until chicken is tender and marinade glazes chicken.

7Remove chicken to serving platter.

8Boil marinade over high heat 1 minute.

9Pour over chicken.

10Garnish with parsley.

11Serve with sour cream.
