- 1 lb boneless skinless chicken breast, cut into small pieces
- 1 tablespoon vegetable oil
- 1 cup corn (I use frozen)
- 1 (15 ounce) can tomato sauce
- 1 (4 ounce) can green chilies, chopped
- 1 12 teaspoons chili powder
- 1 teaspoon onion powder
- 1 cup instant rice
- tortilla chips
Directions

1In a large skillet, cook chicken in oil for 5-6 minutes, until no longer pink.

2Add corn, tomato sauce, chilies, chili powder and onion powder.

3Bring to a boil.

4Reduce heat, cover and simmer for 10-12 minutes.

5Stir occasionally.

6Add instant rice to soak up any remaining liquid, I usually add about 1 cup.

7Let stand 5 minutes, until rice is tender.

8Serve hot with tortilla chips.
