- 3 chicken breasts
- 1/4 c. salad oil
- 2 c. sliced celery
- 1 sliced green pepper
- 5 green onions, sliced
- chicken broth
- 2 Tbsp. soy sauce
- dash of pepper
- 2 Tbsp. cornstarch
- 1/4 c. water
- 1 tsp. salt (optional)
- 1 tsp. sugar (optional)
- rice
Directions

1Remove skin and bones from chicken (make broth from these items).

2Slice meat in short, narrow strips.

3Slice vegetables. Saute chicken in oil until meat is lightly browned.

4Add to chicken the vegetables and fry a few minutes, until vegetables are wilted.

5Mix broth, soy sauce, sugar, salt and pepper; pour over mixture.

6Cover and steam 5 minutes.

7Dissolve cornstarch in water; add to broth and stir until thickened.

8Serve over rice.
