Chicken Parmesan

Ingredients

  • 1 egg
  • 2 lb. chicken parts
  • 1/2 c. Italian flavored bread crumbs
  • 2 Tbsp. salad oil
  • 1 can cream of tomato soup
  • 1/4 c. water
  • 1/4 c. chopped onion
  • 1/2 tsp. garlic powder
  • 1/2 tsp. basil
  • 1/2 tsp. oregano
  • shredded Mozzarella cheese
  • grated fresh Parmesan cheese

Directions

    Beat egg with 1 tablespoon of water.

    Dip chicken in egg mixture and roll in bread crumbs.

    Brown in oil in a frypan. Drain fat.

    Stir in soup, 1/4 cup water, onion and seasonings. Cover and simmer for 45 minutes or until done.

    Stir occasionally.

    Just before serving, sprinkle with cheeses and heat until cheese melts.

    Sprinkle with additional oregano leaves or parsley, if desired.
