- 6 chicken breasts (boneless and skinless)
- 1 egg, beaten
- 1 c. Italian seasoned bread crumbs
- cooking oil
- 1 can tomatoes
- 1 can tomato paste
- 2 tsp. Italian seasoning or oregano and basil
- salt and pepper
- grated Parmesan cheese
- grated or sliced Mozzarella cheese
Directions

1Pound chicken breasts until thin.

2Dip in egg, then in bread crumbs.

3Pan-fry in oil until lightly browned and chicken is almost fully cooked.

4Place in single layer in baking dish.

5Crush up tomatoes.

6Add tomato paste, seasonings, salt and pepper to taste. Cook in saucepan for about 15 minutes to blend flavorings.

7Pour over chicken.

8Sprinkle with Parmesan cheese.

9Bake at 350° for 20 minutes.

10Cover with Mozzarella and bake again until cheese melts.
